Walnut Meat
Great alternate for beef and loaded with protein. Walnut meat can be made in a variety of ways using raw walnuts, mushrooms, onions, and your choice of spices.
Ingredients:
- 3 Cups of Raw Walnuts (soaked)
- 1/2 Tsp Sea Salt
- 1 Tbsp Paprika
- 1 Tbsp Ground Cumin
- 1 Tbsp Chili Powder
- 2/3 Cup Sun Dried Tomatoes (optional)
- 4 Cloves of Garlic (optional)
- 1-2 Habanero Peppers (optional) Deseeded and Chopped *More or less to spice preference
- 1-2 Tsp Nutritional Yeast (optional)
- 1/4 Cup of Spring Water as needed
- Pinch of Cayenne Pepper for more heat
- 2 Tbsp of Lime Juice (optional)
- 1/2 Tsp Garlic and/or Onion Powder
- 1/2 Cup Onions (optional)
- 1/4 Cup Green Bell Peppers (optional)
- 1/4 Cup Red Bell Peppers (optional)
- 1/4 Cup Orange Bell Peppers (optional)
- 2 Tbsp of Grapeseed Oil
Directions:
Soak raw walnuts for several hours or overnight, drain the water and add walnuts, mushrooms (optional), and spices to a food processor (or blender). Pulse until combined and crumbly into a ground meat texture.
(Optional) Add grapeseed oil to pan over medium to high heat and sauté peppers and onions, along with seasonings for about 10 minutes. Add in 2 Tbsp of Spring Water as needed while sautéing to maintain moisture of walnut meat. Serve!
Add sun dried tomatoes to small bowl and cover in warm water. Set aside and allow to soak for about 5 minutes.
Drain sun dried tomatoes (save water mixture for later). Combine Garlic, Sea Salt, Paprika, Cumin, Chili Powder, Habaneros, Nutritional Yeast (optional). Blended into a smooth paste. Add 1 Tbsp of sun dried tomatoes water mixture. Taste and adjust flavor as needed. Add mixture to walnuts and stir to combine.
Mixture can be used on tacos, salads, pastas, casseroles, nachos, burritos and more!
Leftovers can be stored in air-tight container and stored in fridge for up to one week and one month in freezer.
Mexican Flavor: Spices such as Cumin, Chili Powder, Cayenne Pepper, Paprika, Cilantro and/or Lime.
American Flavor: Onion Powder, Garlic Powder. Thyme, Sea Salt and Black Pepper.
Italian Flavor: Oregano, Basil, Sun Dried Tomatoes, Rosemary, Sage, Thyme, Italian Seasoning, Marjoram.
